There aren’t too many movies that I feel inclined to purchase as soon as they are released, but this is definitely an exception.
Have you guys seen the Minions movie yet?
Over the summer, we took J (and his personal minion, Steve) to see Minions in the theater. Taking him to movies is one of our new favorite things to do, since he’s old enough to enjoy them.
We had a blast, and it was clear to see that minions would continue to reign supreme in J’s affections. Once I located the release, I ran right out to surprise J with it that evening. We love to do movie nights together as a family, and typically will glam them up with fun treats!
If you had a choice of a sweet treat, how many of you would choose cheesecake?
It’s a pretty popular option, and my husband definitely would make it his go-to. My 5yo is all about chocolate, if given the choice. I myself am a big fan of banana desserts – banana cream pie, bananas foster, you name it. Something about banana just makes me . . .well, go bananas!
{Giggle.}
Besides, my argument was that if we were watching the Minions movie, bananas were basically a required flavor, right!? We all know minions love bananas!
Since we all disagree on our dessert choice, I thought maybe I could combine them.
Chocolate Banana Cheesecake Bites
Ingredients
For the Crust:
1 1/5 cups graham cracker crumbs
7 tbsp melted butter
1/4 cup brown sugar
1 egg white
For the filling:
1 package chocolate banana pudding mix
1.5 cups cold milk
1 pkg (8oz) cream cheese
1/2 banana, sliced
how to make
Preheat oven to 325 degrees.
Combine graham cracker crumbs and brown sugar in a bowl. Pour in the melted butter and egg white, and use a fork to sift the ingredients until thoroughly mixed.
The egg white is my trick to help the crust stay intact and not crumble. You can also make it without, but I find the extra binding agent helps a lot. Just remember, if you do use egg white, you must bake the crust to kill any bacteria.
Line a muffin tin with cupcake wrappers. Spoon a little of the crust mixture into each paper cup, and use a shot glass or small cup to press firmly into the bottom. I have a tiny sherry glass that perfectly fit mine.
Pop the tin into the oven for ten minutes, or until the crusts start to brown. Let cool completely before filling.
While the crusts are done, you can start the filling. It will need to go in right away, so don’t make it before your graham cracker crusts have cooled.
Cream the softened package of cream cheese with an electric mixer until smooth. In a separate bowl, combine the pudding mix and milk. Whisk briefly, and combine with the cream cheese. Blend until smooth.
Spoon the filling into each crust and top with a banana slice. Refrigerate for 2-3 hours, or freeze if you prefer.
These mini cheesecakes are the perfect size for a snack-able treat!

We decided to make a real go of it, and invited our friends and their kids to join us for Minions movie night!
We got the Illumination Entertainment’s Minions 3D Blu-ray/DVD combo for our new TV, and created a small fort for the kids to lay in. That would be ages 1-6, all laying happily together. Not sure that’s ever possible again!
