The dog days of summer are here, folks. Before it runs out, let’s get in a few more BBQs, a few more summer nights. With that in mind, I present my latest accidental recipe win!
When trying to determine a good dish to bring to a Labor Day BBQ or just a refreshing meal during the hot summer days, look no further than this super simple Pesto Pasta Salad. By using low carb noodles, you don’t even have to feel guilty about it!

I don’t honestly recall where I first stumbled across this brand, but I am a big fan! I’m not affiliated with them at all, but I love promoting products I truly love and this is one of them! ThinSlim Foods makes low carb breads, desserts, and pastas and they are ALL awesome! For pasta aficionados, there is a tiny texture difference, but it’s very slight, less even than using a whole wheat pasta. I highly recommend this line for anyone following a low carb or ketogenic diet.
I threw this dish together on a whim, since I was craving a refreshing pasta salad one hot summer day. I’d had some at a recent BBQ, and just still had that craving. Sadly, I cracked open the fridge to discover I had NO Italian dressing. WHAT!? (That seems like such an odd staple to not have on hand, doesn’t it?)
I did have a jar of basil pesto, something I do like to have around for my pesto brie, as well as a container of grape tomatoes and leftover mozzarella pearls from the 1930’s era birthday bash I threw for the hubby. (THAT post is coming soon!) The idea struck and stuck.
Now, nothing can be perfect right away, as blogging will teach (but not necessarily show). While I very much enjoyed this pesto pasta salad creation, my husband did let me know that he much preferred my homemade pesto to the jar stuff when it came to the salad. So something to think about.
Another thing I love about this salad is how EASY it is! Literally, just toss it together once the pasta is cooked! Outside of slicing the tomatoes, there is no real work involved. It’s light and refreshing, and travels well to any of your BBQ or Labor Day parties!

Easy Low Carb Pesto Pasta Salad
Ingredients
- 1 package Impastable Low Carb Rotini
- 1 cup grape tomatoes, sliced
- 1 cup mozzarella pearls
- 2 tbsp basil pesto
Instructions
- Cook pasta according to package instructions; let cool. A drizzle of olive oil will prevent pasta from sticking. Toss pasta with pesto, mozzarella, and tomatoes. Salt and pepper to taste and enjoy!
