October is here, and that means the countdown to Halloween has begun!! Keep reading to see my delicious Orange Fanta® Halloween Cake recipe – all made from scratch!!
I’ve said it before, and I’ll say it again – I DON’T BAKE. I mean, not really. I can make it if it comes out of a box or a package with specific instructions. My culinary skills are really more of the “let’s toss some spices and things together until dinner forms” line of skills. I’m pretty successful that way. But baking is such a precise art that I rarely venture into new territory.
Lately, however, I’ve been more and more about trying new things, and keeping to unprocessed, “whole” foods. I’m not about to pretend this recipe is healthy, but at least it has ingredients you can recognize and pronounce. 🙂
So, when I started making this recipe, I wanted to make sure I had enough batter to fill my bundt pan. (Okay, my neighbor’s bundt pan. I told you, I don’t bake.) My intention was to make it look sort of “pumpkin” like. (Halloween, get it!?)
Well, I may have gone overboard on doubling the recipe, because I had so much batter, I decided to make some Halloween cupcakes to go with my Halloween cake. So I’m listing the recipe in its original amount, and you can do like I did and double if you want to make cupcakes as well! 🙂
Full disclosure: having mentioned on occasion that I don’t bake, you’re probably wondering how the heck I whipped up a cake from scratch without burning my house down and ending up in a divorce. Well, I’m happy to say that I’m sharing this recipe as one I modified slightly from one I saw originally on The Pioneer Woman. I am not too proud to admit I could never have known how to make a cake from scratch without borrowing from the pros. 🙂
I opted for a cream cheese glaze instead of the one in the original recipe. . . which worked out well, since I had so much batter, I used the rest of the cream cheese for homemade frosting on the cupcakes I ended up making. I added food coloring to the frosting as well, for an orange tint. Mr. Crafty said it looked “peach”, but I reminded him that he knows nothing (like Jon Snow) and it would definitely appear orange. Except it didn’t. It looked peach. {Grumble, grumble, cuss word, grumble.}
I think the orange backdrop helps. 😉 I made the frosting using the leftover cream cheese and powdered sugar, plus a dash more vanilla. I filled some decorating bags and used a star tip to pipe it onto the cupcakes. These are seriously the most gorgeous cupcakes I’ve ever made. I usually slather on frosting from a can with a butter knife. THIS WAS MUCH PRETTIER. I uncovered an unopened stash of Halloween sprinkles and went to town!
And that’s my Orange Fanta Halloween Cake (and cupcakes!) Not too shabby for a non-baker, right?? 😉
Fanta actually came out with some Halloween bottles, which was even more fun for this recipe. 🙂 I grabbed two bottles while on a Family Dollar store run, along with the cream cheese and orange juice I needed for the recipe. Fanta comes in 8 FUN flavors – Orange, Grape, Strawberry, Pineapple, Grapefruit, Apple, Peach, Cherry – so I could definitely see where you could make a LOT of fun recipes with it!
