Ingredients

  • 8 eggs
  • 1 cup egg whites
  • 1/2 red bell pepper
  • 1/4 cup chopped basil
  • 1/4 cup crumbled feta
  • 1 tsp salt

Instructions

  • Beat together eggs and egg whites in a bowl with salt. Spray a muffin tin with cooking spray, or grease with butter. Fill each cup with halfway with peppers, basil, and feta. Fill the remainder with egg mixture. Bake for 20 minutes or until cooked through.
