This is my favorite low carb egg scramble to make for breakfast!
We are big fans of cooking shows, and after watching Masterchef, we learned how Gordon Ramsey makes his scrambled eggs. Of course we had to try it, and it’s an amazing method! He uses creme fraiche in his egg scramble, but I ain’t got that kind of money! (Plus its very hard to find creme fraiche!)
Now we only ever make “Ramsay Eggs” as we call it, but we substitute sour cream or goat cheese for the creme fraiche. Our egg scramble still tastes delicious, and the eggs are so creamy!
Adding the pad of butter is a great addition for a keto recipe since it adds some healthy fats. You can totally mix up this recipe with guacamole, different cheeses, some onion or peppers….tons of options! Be sure to save seasoning your egg scramble for last, per Ramsay!
For this particular one, I actually added sauteed red pepper as well – between this egg scramble and my Basil Feta Red Pepper Egg Muffins, I guess I know what I like!
Low Carb Egg Scramble
Ingredients
- 2 ea eggs
- 1 pad butter
- 1 tbsp sour cream
- 1/4 cup shredded cheese
- 1/4 cup pico de gallo
- chopped green onions
- salt to taste
Instructions
- Crack eggs into saucepan and heat to medium heat. Add butter and stir continuously. Remove from heat for 30 seconds, stirring, and return. Alternate 30 seconds on and off heat. Add sour cream and cheese and stir to combine. Remove from heat, add salt to taste. Top with pico de gallo and chopped onions. Enjoy!
