Cheesy Salsa Stuffed Peppers

There may be absolutely nothing I like better about summer than the chance to use the grill.

GRILL IT ALL!!!

GRILL. ALL. THE. THINGS.

I mean seriously, have you ever had something NOT good on the grill? I’m skeptical if you answer yes.

Grilling means outdoors and sunshine and yummy goodness and all things about summer. So today I’m sharing with you my recipe for my ooey, gooey, cheesy salsa stuffed peppers. . . .on the grill, of course!

It could not be more simple to make this recipe.

Ingredients are few. For this recipe, I used fresh green peppers, Swanson Chicken Broth, Pace Organic Medium Salsa, cumin, paprika, salt, truRoots Quinoa, shredded cheddar cheese and guacamole.

I really like the truRoots brand of quinoa – easy to make and sooo good!

Whenever there is something we use a lot of, I hit up my Sam’s Club. Who wants to run to the grocery store every time you make a simple recipe!? So I make sure our pantry is stocked with necessities, like broth. Well, broth and salsa are both Sam’s Club buys for our house. We eat salsa like it is going out of style, on everything from eggs to meat to peppers!

Chicken broth has so many uses, there is NO reason not to have it in stock. I love that I know many chefs who use Swanson, so I feel a little more like a real cook when I do too. (Yes, I’ve played “Hell’s Kitchen” in my head a few times while making food, lol).

I love it when we can get organic foods in bulk, so I was quick to snap up a 2pack of the Organic Pace Medium Salsa. Pace is our go-to already anyway, so it’s a double win! (I’m usually a total wuss on spice, but Mr. Crafty insists on medium – and I have to admit, it has just the right kick to be delicious without making me lunge for the water.)

I know many people bake stuffed peppers, and that’s perfectly fine! But if I can grill? I grill!

Besides, this is just as easy on the grill, and you don’t have to worry about heating up your house with the oven on during hot summer months.

Cheesy Salsa Stuffed Grilled Peppers

Ingredients

  • 8 green bell peppers
  • 1 cups truRoots Quinoa
  • 2 cups Swanson Chicken Broth
  • 2 cups Pace Organic Medium Salsa
  • 2 tbsp cumin
  • 1 tbsp smoked paprika
  • 1 tsp salt

Instructions

  • Prepare quinoa according to package instructions. (I cook mine in the Swanson's broth instead of water).
  • Combine salsa, cumin, paprika, and salt into cooked quinoa and mix evenly.
  • Slice off tops of green peppers, and hollow out inside of each pepper.
  • Fill each pepper with quinoa mixture and top with shredded cheese, reserving one cup.
  • Place each pepper on the grill and cook for 10-12 minutes, or until cheese melts and bubbles. (I like a little char on my peppers as well.)
  • Top with guacamole and another sprinkle of shredded cheese to serve.
