Cilantro Lime Buttered Cod - you will ADORE this delicious, buttery fish dish!

 

As I understand it, there appears to be two schools of thought when it comes to cilantro – you LOVE it, or you HATE it.

 

How is that possible??

Me personally, cilantro everything. CILANTRO EVERYTHING.  I can’t get enough. I sprinkle it on salads and I live for Mexican dishes with heaping piles of pico de gallo.

I’m constantly searching for cilantro related dishes to make. Now, to be fair, this is partially due to the fact that cilantro comes in a GIANT bunch, and you need like 1/8 of it for a meal. So half the time I’m also just trying to not throw out cilantro gone bad.

This cilantro lime buttered cod is SO easy to make, and you can substitute tilapia or swai, both easy, bland fish. Cod was on sale, so I nabbed it!

This dinner was so light and fresh and buttery… it hit all my check marks for deliciousness! I would love to know if you are a cilantro lover or hater! (If hater, clearly, we cannot be friends. Cilantro Lime Buttered Cod

Servings: 4

Ingredients

  • 2 tbsp butter, melted
  • 4 fillet cod
  • 1/4 cup chopped cilantro, plus 1/2 reserved
  • 1 tbsp lime juice
  • salt and pepper to taste

Instructions

  • Preheat oven to 375 deg. Season cod fillets with salt and pepper. Line a baking sheet with foil and lay cod fillets on top. Whisk melted butter, cilantro, and lime juice together and pour over top of fillets. Top each fillet with additional cilantro. Bake for 25-30 min or until done. Timing will vary based on thickness of filets.
