Happy New Year!! Yay for finally getting my first post up this year! Sadly, the Crafty household has been visited with sickness to kick off 2017 – my two year old ran into double ear infections plus a respiratory infection. YUCK!
On top of sickness, it is FREEZING here in the Midwest! Yesterday’s temp was nine degrees. NINE. I don’t care who you are, that is COLD.
Every winter I crave warm, comforting, easy meals. Usually slow cooker or stock pot soups. Something about winter, I get all soup-crazy! Just close your eyes and picture it. . . comfy blanket, hands cradling a hot mug of delicious soup, curled up on the couch in front of a fire with a good book or movie. . . yep, sounds like heaven.
Ever since my many many many years ago waiting tables at the now-extinct Bennigan’s, I’ve been in love with loaded baked potato soup. Creamy, warm, topped with bacon bits, scallions, and cheese. . .SO GOOD!
Since adopting a low carb lifestyle, I’ve missed the deliciousness that is a baked potato. But you can still have all the goodness without the carbs if you substitute cauliflower! Though, even on a low carb diet, potatoes are a great source of good carbs, so you can still add them in sparingly. {She said, being no health expert in ANY way} I caved on a baked potato shortly before Christmas. 😉
But when choosing low carb, this loaded cauliflower soup fits the bill, and then some!
