There are so many good reasons to make these delicious stuffed mushrooms! As easy as they are – and as filling! – they do wonders for a Sunday brunch, tailgate party, or any random get together!
Another really nice thing about these mushrooms is how easily you can customize them to other flavors! It’s just flavored cream cheese! I used smoked salmon flavor, but you could do a garlic/herb or garden vegetable. . . whatever floats your boat. Just chop up some cooked shrimp and mix it in your cream cheese spread for the filling.
I am a HUGE fan of green tail onions, so I love to chop them up and use them as toppings on almost everything – eggs, potatoes, soup, you name it! They add a nice little crunch to the salmon stuffed mushrooms, as well as a pretty hint of color.
For the mushrooms, simply grill them in olive oil until they are tender, then stuff them with your cream cheese mixture and top with the scallions. Don’t be stingy with the mix, these babies can handle a lot!
As you can see, you’ll want to use a knife and fork on these bad boys.

Shrimp & Salmon Stuffed Mushrooms
Ingredients
- 1 container Smoked Salmon Cream Cheese
- 8 pieces cooked shrimp, chopped
- 1/4 cup green tail onions, chopped
- 4 large caps portabella mushrooms
- 1 tsp olive oil
Instructions
- Mix chopped shrimp in with softened cream cheese until well combined. Grill mushroom caps in oil on stove until pliable, then stuff with cream cheese mixture and top with green tails. Cut into fourths and serve.
