I don’t know what it’s like where you live, but here, we took a quick trip to FREEZETOWN. Seriously, after a lengthy heat wave (by Midwestern standards), we went from 80’s to 40’s in a snap! Now, don’t get me wrong, I appreciate fall weather, but in Chicago no one wants to leap right into winter. So, for this past week’s football Sunday get together, I tried to warm us all up a bit with a delicious Mexican party feast!
I would probably order Mexican food as my last meal if need be. I LOVE IT. So many delicious spices and flavors can be infused in a good Mexican meal! Now, while I do enjoy cooking, on game day I really just want to enjoy time with my friends and watch my team, so I don’t like to spend a lot of time in the kitchen cooking. So I was thrilled to come across these Frontera® Carnitas and Barbacoa Taco Skillets while shopping at Target.
I think any hostess wants to wow her guests, but we can’t ALWAYS spend time slaving over a meal, can we? Sometimes, we’d like to join in the fun, right?? So these skillet meals were perfect to make a delicious Mexican spread without a lot of hassle. I threw in a homemade Mexican chopped salad to go with, a recipe you can grab below!
You guys don’t understand, it is BITTERLY cold outside. While whipping this meal together, I saw snow flurries! It’s November, so that is TOTALLY UNCOOL, Mother Nature. Even in Chicago.
Good thing I picked such delicious, succulent, aromatic skillets to warm all my freezing friends. I love that these skillets work well both in a warm tortilla or over rice.
Do you host tailgates or football parties? Or even just friendly hangouts? If so, I definitely recommend these Frontera Skillets. SO EASY. You quickly have a meal fit for at least four people, if not more. A few tortillas, some Frontera salsa, cheese and guacamole? Done and done!
Since our team is officially terrible this year (and honestly, most years lately), a few of us commiserated with cilantro lime margaritas. And yes, adding cilantro to the margaritas make the even more amazing.
I cooked up both the Carnitas and Barbacoa skillets for this friendly get together, and both were quickly gobbled up. I loved that they took a total of 15 minutes to make! Super easy and plenty of food for all of us! I also snapped up some Frontera Tomatillo Salsa for snacking with chips. All of these premium ingredients made me feel like I had a Mexican restaurant in my own kitchen.
Easy Mexican Chopped Salad
Ingredients
- 1 head romaine lettuce, chopped
- 1 cup frozen corn, cooked and cooled
- 1 can black beans, rinsed and drained
- 1/4 cup cilantro, chopped
- 1 cup sliced cherry tomatos
- 1 medium avocado, diced
Cilantro Lime Vinaigrette
- 1/4 cup lime juice
- 1/4 cup cilantro, chopped
- 1/3 cup olive oil
- 3 tbsp white wine vinegar
- 3 tbsp honey
- salt and pepper to taste
Instructions
- Mix all the salad ingredients together and toss to combine. Drizzle dressing over and toss again until fully dressed. Serve and enjoy!
